Well it’s Sunday tomorrow and I thought it only right to put up a recipe for awesome Yorkies.

Ingredients
4 fresh Large free range eggs
Plain Flour
Milk
Pinch of salt
Oil or Dripping to cook
You will also need a muffin or bun tray, metal only please non of the silicon nonsense.
First Preheat your oven to 200c, and put a little oil into the bottom of each hole in the muffin tray. Put the muffin tray into the oven to heat up.
Crack your 4 eggs into a mixing bowl, add 4 heaped tablespoons of plain flour, a pinch of salt and whisk to a smooth batter, now whisk in milk to loosen the batter,to the consistency of single cream. Make sure it’s not to thick as it will effect the rise.
Put the batter into a jug, and set aside for 5 minutes.
Once the baking tray is blisteringly hot, remove from oven and pour in the batter to about two thirds full, in each hole.
nb: in should sizzle at this point.
Get the tray back into the oven and cook for 20 -25 minutes, but keep an eye on them as all ovens are different. Do not open the oven door until at least 20 minutes as they will sink if you open the door too soon.
Once cooked serve straight away, with the roast of your choice and lots of gravy
You could also fill with a scoop of ice cream and some nuttella spread, as a dessert.
